Ante Partum
This is the first recipe that’s entirely my own design, based on the guidelines for English pale ale from Designing great beers. I designed it in the labour room waiting for the birth of my son, hence the name :-)
It’s a very simple, English-style pale ale, mildly bitter and nicely hopped. I love East Kent Goldings, and wanted to try to build a beer around them.
For 20 litres:
- 2kg Pale Ale malt
- 2kg Marris Otter
- 250g Munich 15EBC
- 25g Hallertau (9%) 60 mins
- 40g East Kent Goldings 5 mins
- 40g East Kent Goldings dry hopping in secundary fermentation
- Safbrew S-04

I also tried a version without dry hopping. It makes for a more basic blonde, which would be typical of many French craft breweries: not very interesting.
